Air Fryer Lemon Butter Fish

Air fry lemon butter fish at 200°C (392°F) for 9 minutes.

Fish fillets are one of the trickiest things to cook without either drying them out or having them stick and fall apart, and the air fryer sidesteps both problems in under 10 minutes. This is the recipe for a fast, light dinner when you don't want to heat up the whole kitchen.

Ingredients

  • 2 fish fillets
  • 1 lemon
  • 1 tbsp butter, melted
  • 1 garlic clove, grated (optional)
  • ½ tsp mixed herbs (optional)
  • Chopped parsley (optional)
  • Salt, pepper

Steps

  1. Pat the fish fillets completely dry, then season both sides with salt and pepper.
  2. In a small bowl, mix the melted butter, grated garlic, lemon juice and mixed herbs.
  3. Brush about half the butter mixture over the fillets so it bastes as it cooks instead of sitting on top raw.
  4. Lay a sheet of parchment in the basket and place the fillets on it - this keeps the delicate fish from sticking or breaking when you go to plate it.
  5. Air fry at 200°C for 9 minutes without flipping.
  6. Check the fish is done - it should flake easily with a fork and look opaque all the way through, with no translucent centre.
  7. Lift the fillets out carefully using the parchment as a sling.
  8. Spoon the remaining lemon butter over the top.
  9. Scatter with chopped parsley and serve immediately.

Tip: Fish is done when it flakes easily with a fork.

Serving & Storage

Serving: Serve with steamed vegetables or plain rice and an extra lemon wedge on the side.

Storage: Fish is best eaten the same day it's cooked; if you must reheat, use the air fryer at 140°C for just a couple of minutes, since any longer will dry it out further.
