Air Fryer Bean & Cheese Burritos

Air fry bean & cheese burritos at 190°C (374°F) for 7 minutes.

Bean and cheese burritos are a pantry-clearing dinner — a can of beans, whatever cheese is in the fridge, and a few fresh vegetables turn into something crisp and satisfying in under 10 minutes in the air fryer. Air frying seam-side down first is what keeps the fold sealed instead of springing open mid-cook.

Ingredients

  • 4 large tortillas
  • 1 can chickpeas or beans, mashed
  • 1 cup grated cheese
  • ½ onion, chopped
  • 1 tomato, chopped
  • ½ tsp chilli powder (optional)
  • Hot sauce, to serve (optional)
  • Salt, oil spray

Steps

  1. Drain the chickpeas or beans and mash them roughly with the chilli powder and a pinch of salt, leaving some whole pieces for texture rather than mashing to a paste.
  2. Lay out the tortillas and spoon the bean mixture into the centre of each.
  3. Top with the grated cheese, chopped onion and chopped tomato, keeping the filling toward the centre.
  4. Fold in the sides of each tortilla, then roll it up tightly into a burrito.
  5. Preheat the air fryer to 190°C.
  6. Spray the burritos with oil and place them seam-side down in the basket so the fold seals shut before flipping.
  7. Air fry for 4 minutes.
  8. Flip each burrito over and air fry for the remaining 3 minutes, until golden and crisp all over.
  9. Check the seams are holding, and secure with a toothpick before cooking next time if any fold wants to spring open.

Tip: Secure with a toothpick if the fold wants to spring open.
