Air Fryer Soya Chaap Tikka

Air fry soya chaap tikka at 200°C (392°F) for 14 minutes.

Soya chaap - soybean dough molded onto a stick to mimic the texture of seekh kebab - has taken over Indian street food and vegetarian grill menus, usually cooked on a tandoor or stovetop griddle. Most home recipes assume one of those setups; the air fryer gets the same smoky, charred dhaba-style exterior with none of the equipment, in under 15 minutes.

Ingredients

  • 500 g soya chaap sticks, cut into 2-inch pieces
  • 1/2 cup thick yogurt
  • 1.5 tsp Kashmiri red chilli powder
  • 1 tbsp ginger-garlic paste (optional)
  • 1 tsp garam masala (optional)
  • Juice of 1/2 lemon (optional)
  • Salt, 2 tbsp oil
  • Sliced onion, to serve (optional)
  • Chopped coriander, to garnish (optional)

Steps

  1. Pat the soya chaap pieces dry.
  2. Whisk the yogurt, chilli powder, ginger-garlic paste, garam masala, lemon juice, salt and oil into a thick marinade.
  3. Coat the chaap pieces evenly in the marinade, cover and refrigerate for at least 30 minutes, ideally 2 hours.
  4. Preheat the air fryer to 200°C for 3 minutes.
  5. Thread onto skewers if you like, or arrange directly in the basket in a single layer.
  6. Air fry for 12-14 minutes, shaking or turning halfway, until charred at the edges.
  7. Scatter with chopped coriander and serve with sliced onion.

Tip: Soya chaap drinks up marinade fast but also dries out fast under high heat since it has no fat of its own - don't skip the oil in the marinade, and pull it the moment the edges char, since a few extra minutes turns it rubbery instead of tender.

Serving & Storage

Serving: Serve hot with mint-coriander chutney, sliced onion rings and lemon wedges - great as a starter or stuffed into a roti wrap with chutney.

Storage: Best fresh. Leftovers keep 2 days in the fridge; reheat in the air fryer at 190°C for 3-4 minutes to re-crisp the edges.
