Air Fryer Stuffed Capsicum

Air fry stuffed capsicum at 180°C (356°F) for 14 minutes.

Capsicums hold their shape and structure well under dry heat, softening just enough at the edges while the air fryer browns the cheese topping the way a broiler would, all without needing to babysit a full-size oven for a small batch.

Ingredients

  • 3 large capsicums, tops cut and seeds removed
  • 1½ cups filling: cooked rice, mashed potato or crumbled paneer
  • 1 onion, chopped (optional)
  • 1 tomato, chopped (optional)
  • ½ cup grated cheese (optional)
  • 1 tsp garam masala or mixed herbs (optional)
  • ¼ cup corn (optional)
  • Salt, oil

Steps

  1. Cut the tops off the capsicums and remove the seeds and membranes.
  2. Mix the filling — cooked rice, mashed potato or crumbled paneer — with the onion, tomato, corn, garam masala, salt and half the cheese.
  3. Taste the filling and adjust the seasoning before stuffing, since you won't get another chance to fix it once it's inside the capsicum.
  4. Stuff the capsicums generously, pressing the filling down slightly so it holds together as it cooks.
  5. Top each capsicum with the remaining cheese.
  6. Preheat the air fryer to 180°C and stand the capsicums upright in a small tin so they don't tip over, or place directly in the basket.
  7. Air fry for 7 minutes.
  8. Check the capsicums — the skin should be starting to soften.
  9. Air fry for a final 7 minutes, until the capsicums soften further and the cheese browns, with the skin looking slightly blistered and giving a little when pressed.

Tip: Stand them upright in a small tin so they don’t tip over.

Serving & Storage

Serving: Serve as a light main with a side salad, or with warm rotis for a fuller meal.

Storage: Fridge up to 2 days; reheat in the air fryer at 170°C for 5–6 minutes, checking the filling is heated through in the center, since capsicums retain heat unevenly.
