Air Fryer Sujuk and Eggs

Air fry sujuk and eggs at 180°C (356°F) for 10 minutes.

Sujuk and eggs is a Gulf and Turkish breakfast staple normally cooked in a skillet, but the air fryer renders the spiced sausage just as well in its own basket — letting out its red, paprika-stained oil — and then sets the eggs straight in that same fat for a one-dish breakfast with almost nothing to scrub afterwards.

Ingredients

  • 150 g sujuk (spiced beef sausage), sliced diagonally
  • 4 eggs
  • 1 tomato, diced (optional)
  • 1 green chilli, sliced (optional)
  • ½ tsp butter or oil, for greasing (optional)
  • Salt and pepper, to taste

Steps

  1. Preheat the air fryer to 180°C (356°F).
  2. Lightly grease a small oven-safe dish or two ramekins that fit inside your air fryer basket.
  3. Arrange the sliced sujuk in a single layer in the dish and air fry for 4 minutes, until it releases its red oil and the edges just start to crisp.
  4. Stir the diced tomato into the sujuk and its rendered oil, if using.
  5. Crack the eggs over the top, keeping the yolks whole, and season lightly with salt and pepper.
  6. Return the dish to the air fryer and cook for 5-6 minutes at 160°C, until the whites are just set but the yolks are still soft — check at 4 minutes if you prefer a runnier yolk.
  7. Scatter the sliced green chilli over the top and serve straight from the dish while hot.

Tip: Sujuk already carries plenty of spiced, paprika-red oil, so skip any extra oil for the sausage — render it in the air fryer first, then cook the eggs directly in that fat for the most flavour.

Serving & Storage

Serving: Serve with warm flatbread or pita for scooping, and a side of fresh tomato and cucumber.

Storage: Best eaten fresh, since the eggs don't reheat well. Leftover cooked sujuk alone keeps 2 days in the fridge and reheats fine in the air fryer.
