Air Fryer Za’atar Manakish

Air fry za’atar manakish at 180°C (356°F) for 5 minutes.

Manakish needs a hot, fast oven to crisp the base before the toppings turn it soggy, and the air fryer reaches that heat in a fraction of the usual preheat time. Circulating air crisps the edges of the bread while the za'atar oil toasts into the surface instead of just sitting on top. Cheese melts and browns in the same short burst, so breakfast is ready before the kettle's even boiled.

Ingredients

  • 2 pita / Arabic bread
  • 2 tbsp za’atar
  • Grated cheese, for a cheese version (optional)
  • 1 tomato, sliced, to serve (optional)
  • 2 tbsp olive oil

Steps

  1. Stir the za'atar and olive oil together in a small bowl until you have a loose, spreadable paste — not so wet that it will soak straight through the bread.
  2. Lay the pita or Arabic bread out flat on your work surface.
  3. Spread the za'atar paste over the bread right to the edges, so the edges crisp evenly instead of staying pale and soft.
  4. If making a cheese version, scatter the grated cheese over one of the breads now.
  5. Preheat the air fryer to 180°C.
  6. Place the bread in the basket, in a single layer if your basket allows, or in batches if not.
  7. Air fry for 4 minutes, then check — the edges should be starting to look toasted and any cheese should just be softening.
  8. Continue for up to 1 more minute (5 minutes total), until the edges are lightly toasted and any cheese is bubbling and just starting to brown.
  9. Remove from the basket and top with sliced tomato just before serving, so it stays fresh instead of steaming the bread.

Tip: Half za’atar, half cheese on one bread is the classic bakery “mix”.

Serving & Storage

Serving: Serve with fresh mint tea, labneh and a few olives on the side, the classic Dubai breakfast spread.

Storage: Best eaten fresh, as the crisp base softens within a few hours. If needed, keep 1 day in the fridge and re-crisp in the air fryer at 180°C for 2 min.
