Air fry aloo tikki at 190°C (374°F) for 14 minutes.
Tikkis are essentially shallow-fried in a pan on the stovetop, but a hot air fryer surrounds each patty the same way oil would, browning both broad faces at once so you skip the flip-and-splash of pan-frying. The potato-cornflour crust firms up in dry heat rather than steaming, which is what keeps a tikki from turning mushy in the middle.

Ingredients
4 potatoes, boiled and mashed
3 tbsp cornflour, breadcrumbs or besan
¼ cup green peas (optional)
1 green chilli, finely chopped (optional)
2 tbsp chopped coriander (optional)
1 tsp chaat masala (optional)
½ tsp red chilli powder (optional)
1 tsp grated ginger (optional)
Salt, oil spray
Steps
In a large bowl, combine the mashed potato with the cornflour, breadcrumbs or besan, peas, green chilli, coriander, ginger, chaat masala, red chilli powder and salt.
Knead the mixture briefly with your hands just until it holds together without crumbling — overworking it makes it gluey.
Divide into 8 equal portions and shape each into a flat patty about 2 cm thick.
Set the shaped patties on a plate for a few minutes to firm up before oiling, so they hold their shape better in the basket.
Brush or spray both sides of each patty generously with oil — this is what browns the crust, since there's no oil bath doing that job here.
Preheat the air fryer to 190°C.
Arrange the patties in a single layer in the basket, leaving gaps between them.
Air fry for 7 minutes.
Flip each patty carefully with a thin spatula.
Air fry for a final 7 minutes, until golden, firm to the touch, and sounding slightly hollow when tapped rather than soft in the middle.
Serve immediately with ketchup or green chutney, before the crust has a chance to soften.
Tip: Chill the shaped tikkis for 15 min so they hold together better.

Serving & Storage
Serving: Classic with tamarind-date chutney and mint-coriander chutney side by side, or sandwiched into a pav for a tikki-burger twist.
Storage: Fridge up to 3 days in an airtight container; reheat in the air fryer at 180°C for 5–6 minutes to bring the crust back, since microwaving turns them soggy.
