Air Fryer Bread Pakora

Air fry bread pakora at 200°C (392°F) for 10 minutes.

Bread pakora is usually deep-fried, which is exactly why it rarely gets made at home. The air fryer crisps the besan coating into the same golden shell with just a spray of oil, while the bread and potato filling stay soft and warm inside — a street-food favourite you can actually make on a weeknight.

Ingredients

  • 4 slices white or wheat bread
  • 2 potatoes, boiled and mashed
  • ½ cup gram flour (besan)
  • 1 small onion, finely chopped (optional)
  • 1 green chilli, finely chopped (optional)
  • 2 tbsp chopped coriander (optional)
  • ½ tsp red chilli powder (optional)
  • ¼ tsp turmeric (optional)
  • ½ tsp chaat masala (optional)
  • Salt, water, oil spray

Steps

  1. Mix the mashed potato with the chopped onion, green chilli, coriander, chilli powder, turmeric, chaat masala and salt to make the filling.
  2. Whisk the besan with a pinch of salt and just enough water to make a smooth, medium-thick batter — thick enough to coat the back of a spoon, not drip straight off.
  3. Spread a generous layer of the potato filling on one bread slice and sandwich with a second slice, pressing the edges to seal. Repeat with the remaining slices.
  4. Cut each sandwich diagonally into 2 triangles (or into quarters for bite-size pakoras).
  5. Preheat the air fryer to 200°C (400°F).
  6. Dip each piece quickly in the besan batter, coating both sides and letting the excess drip off — don't oversoak or the centre stays gooey.
  7. Arrange in a single layer in the basket and spray generously with oil on both sides.
  8. Air fry for 5 minutes, then flip and spray again.
  9. Air fry a final 5 minutes (10 minutes total) until deep golden and crisp at the edges.

Tip: Keep the batter thick enough to cling to the bread, not drip off it — a thin, runny batter never crisps up in an air fryer, it just stays pale and soft.

Serving & Storage

Serving: Serve hot with green chutney and tomato ketchup alongside a cup of masala chai — classic monsoon-evening snacking.

Storage: Best eaten straight away while the coating's still crisp; leftovers go soft, but a 3-4 minute reheat in the air fryer at 190°C brings most of the crunch back.
