Air Fryer Bang Bang Shrimp

Air fry bang bang shrimp at 200°C (392°F) for 9 minutes.

Bang Bang Shrimp is the Bonefish Grill copycat everyone searches for: crispy panko-coated shrimp tossed in a creamy, sweet-spicy mayo-chilli sauce. Deep-frying shrimp at home is messy and easy to overcook; the air fryer gets the panko coating properly crisp with a fraction of the oil and far less cleanup.

Ingredients

  • 500 g shrimp, peeled, deveined and tails removed
  • 1 egg, beaten
  • 3 tbsp cornstarch
  • 100 g panko breadcrumbs
  • salt, 1/2 tsp black pepper, cooking oil spray
  • 4 tbsp mayonnaise
  • 3 tbsp sweet chilli sauce
  • 1 tbsp sriracha, to taste (optional)
  • 1 scallion, thinly sliced, to garnish (optional)

Steps

  1. Pat the shrimp dry and season with salt and pepper.
  2. Dip each shrimp in the beaten egg, then dredge in cornstarch, then press into the panko to coat evenly.
  3. Preheat the air fryer to 200°C for 3 minutes.
  4. Arrange the shrimp in a single layer, spray with oil, and air fry for 7-9 minutes, flipping halfway, until golden and crisp.
  5. Meanwhile, whisk the mayonnaise, sweet chilli sauce and sriracha together to make the bang bang sauce.
  6. Toss the hot shrimp in the sauce (or drizzle it over) and scatter with sliced scallion.
  7. Serve immediately while the coating is still crisp.

Tip: Toss the shrimp in the sauce right before serving, not the moment they come out of the basket - give them 30 seconds to rest first so the coating sets slightly and stays crunchy under the sauce instead of going soft on contact.

Serving & Storage

Serving: Serve as an appetizer on their own with toothpicks, or piled over rice or in lettuce cups for a light meal - either way, serve immediately while the coating is crisp.

Storage: Best eaten fresh, since the sauce softens the coating over time. If you must save leftovers, keep the sauce separate and store the shrimp alone for up to 2 days; reheat in the air fryer at 180°C for 3-4 minutes before saucing.
