Air Fryer Chickpea Burgers

Air fry chickpea burgers at 190°C (374°F) for 14 minutes.

Chickpea burgers give you a satisfying, protein-heavy patty without needing a meat substitute, and the air fryer browns the outside nicely while keeping the inside from drying into something crumbly. A can of chickpeas you'd otherwise put in a salad turns into dinner for two in well under half an hour.

Ingredients

  • 1 can chickpeas, drained and mashed
  • ½ cup breadcrumbs
  • ¼ onion, finely chopped
  • 1 garlic clove, grated
  • 1 tsp cumin
  • 2 tbsp chopped coriander (optional)
  • Buns, to serve (optional)
  • Yogurt or mayo, to serve (optional)
  • Salt, pepper, 1 tbsp oil

Steps

  1. Drain the chickpeas and mash them in a bowl until mostly smooth but with some texture left — too smooth and the patties turn dense and paste-like once cooked.
  2. Add the breadcrumbs, chopped onion, grated garlic, cumin, coriander, salt and pepper, and mix until evenly combined.
  3. Divide the mixture into 4 portions and shape into patties about 2 cm thick, pressing them firmly so they hold together in the basket.
  4. If you have time, chill the shaped patties for 15 minutes — they hold together better once cooked.
  5. Preheat the air fryer to 190°C.
  6. Brush both sides of each patty with oil and arrange them in the basket with space between them.
  7. Air fry for 7 minutes.
  8. Flip each patty over and air fry for a further 7 minutes, until firm to the touch and golden on both sides.
  9. Toast the buns lightly if you like, then build the burgers with the patties and your usual toppings.
  10. Serve while still warm, so any cheese melts slightly against the patty.

Tip: Chill the shaped patties for 15 min if you have time — they hold together better.

Serving & Storage

Serving: Serve in a toasted bun with lettuce, tomato and a spoon of yogurt or mayo, alongside a handful of fries.

Storage: Refrigerate cooked patties for up to 3 days, or freeze between parchment for up to a month, and reheat straight from the fridge in the air fryer at 180°C for 5–6 min to keep them firm rather than steaming them soft in the microwave.
