Air fry frozen sambousek at 180°C (356°F) for 10 minutes.
Cheese-filled sambousek leak faster than meat ones if the seal isn't tight - keep an eye on any with a visible seam and pull those first if you see cheese starting to bubble out.

Ingredients
16 frozen sambousek (about 450 g), meat or cheese filled - straight from the freezer
A pinch of za'atar or sumac, to finish (optional)
Tahini or yogurt dip, to serve (optional)
Oil spray
Steps
Take the sambousek straight from frozen - don't thaw them, or the thin pastry turns soft and won't crisp evenly.
Preheat the air fryer to 180°C for 3 minutes.
Spray both sides of the pastry lightly with oil - left dry, the crescents stay pale and slightly floury instead of crisping.
Arrange in a single layer, leaving small gaps between each piece so the air can get around them.
Air fry for 6 minutes, then flip each one over.
Air fry a further 4 minutes (10 minutes total) until golden and blistered - check a couple of minutes early if yours are on the smaller side.
Let them sit for a minute before serving; they firm up as they cool slightly and the filling stays put when you bite in.
Serve with a tahini or yogurt dip and a scatter of za'atar or sumac if using.
Tip: Cheese-filled sambousek leak faster than meat ones if the seal isn't tight - keep an eye on any with a visible seam and pull those first if you see cheese starting to bubble out.
