Air Fryer Patti Samosa

Air fry patti samosa at 180°C (356°F) for 12 minutes.

Spring roll sheets are thin and low in fat already, so they don't need submersion in oil to turn brittle-crisp — the air fryer's dry heat does it with just a brushing, which is also why patti samosas made this way stay lighter than the deep-fried version. The thin wrapper also means heat gets through to the filling fast, so a short cook time is enough.

Ingredients

  • 10 spring roll sheets
  • 3 potatoes, boiled and mashed
  • ¼ cup green peas (optional)
  • 1 small onion, finely chopped (optional)
  • 1 green chilli, chopped (optional)
  • ½ tsp garam masala (optional)
  • ½ tsp red chilli powder (optional)
  • 2 tbsp chopped coriander (optional)
  • 1 tbsp flour + water, to seal (optional)
  • Oil for brushing, salt

Steps

  1. Mix the mashed potato with the peas, onion, green chilli, garam masala, red chilli powder, coriander and salt for the filling, mashing just enough that it holds together without turning gluey.
  2. Lay out a spring roll sheet strip and fold one end over to start a cone shape.
  3. Spoon in the filling, then continue folding the strip to fully enclose it.
  4. Seal the open edge with the flour-and-water paste, pressing firmly so it won't pop open in the hot air.
  5. Repeat with the remaining sheets and filling, keeping unused sheets under a damp cloth so they don't dry and crack.
  6. Brush each samosa with oil on all sides, including the folded seams, so the whole surface browns evenly.
  7. Preheat the air fryer to 180°C.
  8. Arrange the samosas in a single layer in the basket with space between them.
  9. Air fry for 6 minutes.
  10. Turn each samosa over.
  11. Air fry for a final 6 minutes, until crisp and golden — tap one and listen for a light, papery crackle, a sign the sheet has fully dried out.

Tip: Keep the unused sheets under a damp cloth so they don’t dry and crack.

Serving & Storage

Serving: Serve with a tangy tamarind chutney or ketchup and hot chai, the way they're sold at train station stalls.

Storage: Best eaten fresh within an hour since the thin sheets go leathery in the fridge; if needed, refrigerate up to 2 days and re-crisp in the air fryer at 180°C for 4 minutes, though the wrapper won't be quite as shatter-crisp as freshly made.
