Air fry kerala-style prawn fry at 200°C (392°F) for 8 minutes.
Prawns cook through in just a few minutes no matter the method, so the air fryer's real advantage here is speed and a hands-off char — the curry leaves crisp right alongside the prawns, releasing their oil into the hot air the way they would in a well-seasoned kadai.

Ingredients
400 g prawns, peeled and deveined
1½ tsp red chilli powder
¼ tsp turmeric (optional)
1 tsp ginger-garlic paste (optional)
A sprig of curry leaves (optional)
Juice of ½ lemon (optional)
Salt, ½ tsp black pepper, 1 tbsp oil (coconut oil is best)
Steps
Marinate the prawns with the red chilli powder, turmeric, pepper, ginger-garlic paste, lemon juice and salt for 15 minutes — not much longer, since prawns can turn rubbery if the acid sits on them too long.
Toss the marinated prawns with the curry leaves and oil so the leaves get an even coating.
Preheat the air fryer to 200°C.
Arrange the prawns in a single layer in the basket.
Air fry for 4 minutes.
Shake the basket to turn the prawns and redistribute the curry leaves.
Air fry for a final 4 minutes, until the prawns turn opaque pink and curl slightly, with the leaves visibly crisp.
Serve immediately with rice and a simple dal, or on its own as a starter.

Serving & Storage
Serving: Serve over coconut rice with a wedge of lime, or pass around with toothpicks as a starter alongside drinks.
Storage: Eat right away — prawns turn tough and rubbery on reheating; if you do refrigerate leftovers, keep them only 1 day and warm gently in the air fryer at 160°C for 2–3 minutes, no longer.
