Air Fryer Banana Pancake Bites

Air fry banana pancake bites at 180°C (356°F) for 10 minutes.

These are pancakes without the standing-over-a-pan part — the batter goes straight into a muffin tray and the air fryer does the rest, giving you the same fluffy banana-oat texture in bite-sized rounds. Good for a lazy weekend breakfast when you want pancakes but not the cleanup.

Ingredients

  • 1 ripe banana, mashed
  • 2 eggs
  • ½ cup oats
  • 2 tbsp milk
  • ½ tsp cinnamon (optional)
  • Honey, to serve (optional)

Steps

  1. Mash the ripe banana in a bowl until smooth.
  2. Whisk in the eggs, oats, milk and cinnamon until you get a thick batter that holds its shape on a spoon rather than pouring freely.
  3. Grease a silicone muffin tray or small cups, or prepare a piece of parchment if cooking as one flat round.
  4. Spoon the batter into the tray, filling each cup about halfway, since the batter will puff up as it cooks.
  5. Preheat the air fryer to 180°C.
  6. Place the tray in the basket and air fry for 6 minutes.
  7. Press the centre of one bite lightly — it should spring back rather than leaving a dent — and continue for the remaining 4 minutes if needed, up to 10 minutes total.
  8. Check the tops are set and golden before removing from the basket.
  9. Drizzle with honey while still warm enough for it to soak in slightly, then serve.

Tip: No muffin tray? Cook it as one flat round on parchment instead, like a big pancake.

Serving & Storage

Serving: Serve warm with extra honey or a spoon of yogurt and fresh fruit on the side.

Storage: Refrigerate for up to 3 days and reheat in the air fryer at 160°C for 3–4 min — they firm back up nicely, unlike in the microwave where they turn a bit rubbery.
