Air Fryer Chicken Seekh Kebab

Air fry chicken seekh kebab at 200°C (392°F) for 12 minutes.

Minced meat kebabs need a hot, dry surface to sear the outside quickly before the fat renders out and the shape collapses — the air fryer's tight airflow does that fast, which is what keeps a seekh kebab holding its shape without a skewer turning over live coals.

Ingredients

  • 500 g minced chicken (or lamb)
  • 1 onion, grated and squeezed dry
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala (optional)
  • 1 tsp red chilli powder (optional)
  • ¼ cup chopped coriander (optional)
  • 1 green chilli, finely chopped (optional)
  • Salt, oil spray

Steps

  1. Mix the minced chicken with the grated and squeezed-dry onion, ginger-garlic paste, garam masala, red chilli powder, coriander, green chilli and salt.
  2. Knead the mixture well for 2 minutes until it turns slightly sticky and binds together, which is what keeps the kebabs from falling apart.
  3. Wet your hands to stop the mince sticking, then shape into 8 long kebabs around skewers, or as flat ovals.
  4. Press each kebab firmly and evenly so it doesn't cook unevenly or crack open in the air fryer.
  5. Preheat the air fryer to 200°C.
  6. Spray the kebabs with oil and arrange them in the basket with space between each.
  7. Air fry for 6 minutes.
  8. Turn the kebabs over.
  9. Air fry for a final 6 minutes, until browned outside and no longer pink inside when you cut into the thickest one.

Tip: Wet your hands before shaping — it stops the mince sticking to your fingers.

Serving & Storage

Serving: Serve with mint-coriander chutney, sliced onions and lemon wedges, wrapped in a warm roomali roti.

Storage: Fridge up to 3 days; reheat in the air fryer at 180°C for 4–5 minutes to re-crisp the exterior — microwaving will make them rubbery.
