Air Fryer Chicken Fajitas

Air fry chicken fajitas at 200°C (392°F) for 14 minutes.

Fajitas in the air fryer come together faster than the stovetop version and still get you those slightly charred vegetable edges that make fajitas taste like fajitas. Keeping the chicken and vegetables in a single layer, not piled up, is what lets the basket's hot air actually brown them instead of just steaming everything through.

Ingredients

  • 500 g chicken, sliced into strips
  • 2 capsicums, sliced
  • 1 onion, sliced
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp chilli powder (optional)
  • Tortillas, to serve
  • Lime or lemon, to finish (optional)
  • Salt, 1 tbsp oil

Steps

  1. Slice the chicken into even strips so they cook at the same rate.
  2. Slice the capsicums and onion into similar-sized strips.
  3. In a large bowl, toss the chicken and vegetables with the paprika, cumin, chilli powder, salt and oil until everything is evenly coated.
  4. Preheat the air fryer to 200°C.
  5. Spread the mixture out in the basket in as even a layer as you can, rather than piling it in — the vegetables need space to char instead of steam.
  6. Air fry for 6 minutes, then shake the basket.
  7. Continue air frying for a further 8 minutes, until the chicken is cooked through with no pink left and the vegetables have caught some char at the edges.
  8. Warm the tortillas while the fajita mix finishes cooking.
  9. Squeeze lemon or lime over the chicken and vegetables as soon as they come out.
  10. Pile into the warm tortillas while everything is still hot from the basket.

Tip: Don’t crowd the basket — the vegetables need space to char instead of steam.

Serving & Storage

Serving: Serve with warm tortillas, and let everyone build their own with sour cream, salsa or grated cheese on the side.

Storage: Refrigerate the chicken and vegetables for up to 3 days and reheat in the air fryer at 180°C for 4–5 min — this brings back some of the char that a microwave can't.
