Air Fryer Pita Pizza

Air fry pita pizza at 180°C (356°F) for 6 minutes.

This is less a recipe and more a five-minute answer to "what's for dinner" using whatever's in the fridge — flatbread, cheese, and a scrape of sauce is all it really needs. The air fryer's small, hot chamber crisps the base the way a wide oven often struggles to at this thickness.

Ingredients

  • 2 pita breads or wraps
  • 1 cup grated cheese
  • 2 tbsp ketchup or pizza sauce (or sliced tomato)
  • ½ capsicum, sliced (optional)
  • ½ onion, sliced (optional)
  • 3 mushrooms, sliced (optional)
  • Green chilli, sliced (optional)
  • Oregano, to sprinkle (optional)

Steps

  1. Spread the sauce over the pita in a thin, even layer, leaving a small border so it doesn't spill over the edges as it cooks.
  2. Scatter over the cheese, then the capsicum, onion, mushrooms and chilli - go easy on the toppings so the base still crisps instead of steaming under a heavy pile.
  3. Finish with a sprinkle of oregano.
  4. Preheat the air fryer and place the pita directly in the basket, or on a small tray if your basket has large holes.
  5. Air fry at 180°C for 3 minutes.
  6. Check the cheese and continue for another 3 minutes (6 minutes total) until it's fully melted and the base has crisped at the edges.
  7. Lift the underside with a spatula to confirm it's firmed up, not just the top.
  8. Slide onto a board, slice, and serve hot.

Tip: Leftover chicken tikka makes a great topping.

Serving & Storage

Serving: Cut into wedges and serve with a simple side salad to round out the meal.

Storage: Best fresh, but leftovers reheat well in the air fryer at 180°C for 3 min to recrisp the base; the microwave will leave it soft and chewy.
