Air Fryer Vanilla Mug Cake

Air fry vanilla mug cake at 160°C (320°F) for 10 minutes.

A mug cake is the single-serve fix for a sweet craving, and the air fryer does a better job with it than the microwave — you get an actual risen, slightly domed top instead of a dense, rubbery block. It's ready in about the time it takes to clear the dinner table.

Ingredients

  • 4 tbsp flour
  • 3 tbsp sugar
  • 1 egg
  • 3 tbsp milk
  • 1 tbsp butter, melted
  • ¼ tsp vanilla essence (optional)
  • 1 tbsp chocolate chips (optional)

Steps

  1. Melt the butter and let it cool slightly so it doesn't scramble the egg when mixed in.
  2. In an air-fryer-safe mug or small ramekin, whisk together the flour, sugar, egg, milk, melted butter and vanilla essence until smooth.
  3. Scrape down the sides of the mug so there's no dry flour left at the bottom.
  4. Stir in the chocolate chips.
  5. Leave at least 2 cm of space at the top of the mug for the batter to rise.
  6. Preheat the air fryer to 160°C.
  7. Place the mug in the basket and air fry for 8 minutes.
  8. Check with a skewer inserted into the centre — it should come out mostly clean, with maybe a few moist crumbs clinging to it — and give it 2 more minutes if still wet, up to 10 minutes total.
  9. Let it sit for 2 minutes before eating — the centre holds heat far longer than it looks like it should, and diving in too soon means a burnt tongue.

Tip: Don’t overfill the mug — leave at least 2 cm at the top for it to rise.

Serving & Storage

Serving: Serve straight from the mug with a scoop of ice cream on top, or turn it out onto a small plate with a dusting of cocoa powder.

Storage: Best eaten fresh while warm; if you do save it, cover and refrigerate for a day and reheat in the air fryer at 140°C for 2 min rather than the microwave, which can make it rubbery.
