Air Fryer Zucchini Fries

Air fry zucchini fries at 200°C (392°F) for 10 minutes.

Zucchini holds a lot of water, so the usual problem with breaded zucchini fries is a soggy coating — the air fryer's dry heat and quick cook time help the crumb set before that moisture has a chance to seep through. A lighter alternative to potato fries when zucchini's in season.

Ingredients

  • 2 zucchini, cut into sticks
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • 2 tbsp grated cheese (optional)
  • 2 tbsp flour (optional)
  • ½ tsp mixed herbs (optional)
  • Salt, oil spray

Steps

  1. Pat the zucchini sticks dry, then dust them with flour - this gives the egg wash something to grip, since zucchini skin alone is too slick for a coating to stick to.
  2. Dip each stick into the beaten egg, letting the excess drip off.
  3. Press it into the breadcrumbs mixed with cheese and herbs, coating the full length of the stick.
  4. Arrange the coated sticks in a single layer in the basket and spray lightly with oil.
  5. Air fry at 200°C for 5 minutes.
  6. Flip and air fry another 5 minutes (10 minutes total) until the coating is deep golden and firm to the touch.
  7. Check a thicker stick to make sure the coating has set and isn't soft or pale anywhere.
  8. Serve hot with your dip of choice.

Tip: Salt the sticks and rest 10 min, then pat dry. Less water = crispier.

Serving & Storage

Serving: Serve with marinara or ranch for dipping while they're still hot and crisp.

Storage: Best eaten fresh, since zucchini keeps releasing moisture as it sits; if you do reheat, use the air fryer at 200°C for 3–4 min rather than the microwave, which turns them soggy.
